Yoghurt & Sumac Free Range Chicken Kebabs with Quinoa Salad

Ingredients
- Hazeldenes Free Range Yoghurt & Sumac Kebabs x 2 packs
- 500g ready cooked brown rice & quinoa mix
- 1/4 cup slivered almonds, toasted
- 1 lebanese cucumber, diced
- 2 radishes, finely sliced
- 1 tbsp craisins, chopped
- 1 tbsp extra virgin olive oil
- 2 tsp lemon juice
- Salt flakes & freshly ground black pepper
For serving
- Mint leaves
- Lemon wedges
- 1/3 cup natural yogurt
- 1/2 tsp finely grated lemon rind
Method
- Preheat a bbq or grill plate to medium and brush with a little oil. Cook the kebabs for approximately 15 minutes, turning regularly to ensure even cooking on all sides.
- For the salad, combine the quinoa mix, almonds, cucumber, radish and craisins. Add the oil and lemon juice, season to taste and mix well.
- Combine yoghurt and lemon rind. Season well and set aside.
- For serving, accompany grilled kebabs with quinoa salad and yoghurt sauce. Finish with lemon wedges and mint leaves.
TIPS:
– This dish can also be accompanied with some grilled flatbreads.
– In place of the quinoa mix, use couscous, brown rice, or freekeh if preferred.
