
Lemon & Thyme Roasted Chicken

Ingredients
- Hazeldenes Free Range Whole Chicken
- 2 lemons – one cut into quarters, the other cut into thick slices
- 5-6 sprigs thyme
- Extra virgin olive oil
- Salt flakes & freshly ground black pepper
- 800g baby red potatoes, cut into thick slices
- 1 tbsp extra virgin olive oil
- 1 garlic bulb, cut in half
- 200g green beans, topped and steamed
Method
- Preheat oven to 200°C (180°C fan-forced).
- Pat chicken dry and place into a baking pan. Stuff the lemon wedges and 3-4 thyme sprigs into the cavity, drizzle chicken with a little oil and sprinkle with salt flakes and pepper.
- Cook chicken for 20 minutes, then reduce the oven temperature to 180°C (160°C fan-forced) and continue cooking for 20 minutes per 500g.
- Whilst chicken is cooking, toss potatoes and lemon slices in olive oil and season well. Arrange over a baking tray and scatter with additional thyme. Add garlic to tray and bake for 35-40 minutes, until potatoes are crisp and golden.
- Oven chicken is cooked through, set aside for 5 minutes before slicing. Accompany with the roasted vegetables and steamed beans.
TIP: For a fresh jus style gravy, you can cook down the pan juices and mix with a little white wine vinegar and seasoning.
