Honey Soy Chicken Kebabs with Egg Rice

Hazeldenes Honey Soy Chicken Kebabs
Ingredients
- 500g Hazeldenes RSPCA Approved Thigh Fillets, cubed
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 tbsp finely grated fresh ginger
- 2 cups freshly cooked Jasmine rice
- 2 eggs
- ½ red capsicum, finely diced
- 4 spring onions, sliced
- Sesame oil
- White pepper
- Crispy fried shallots or sesame seeds to garnish (optional)
Method
- Combine chicken cubes, honey, soy sauce, ginger and 1 tsp oil. Toss to coat thoroughly and refrigerate (1 hour is best).
- Soak bamboo skewers in water. Preheat a frying pan to medium.
- Drain the chicken from marinade, thread onto skewers and cook on lightly oiled pan for 15 minutes, turning regularly to ensure even cooking on all sides.
- Whisk eggs with a little white pepper. Heat 1 tsp oil in a small frying pan and add eggs. Stir until just cooked, remove from pan and roughly chop.
- Add egg to the hot rice, capsicum, spring onions and combine.
- Serve with kebabs and top with fried shallots or sesame seeds (optional).
TIPS:
– For quicker prep, use a sachet of pre-cooked Jasmine rice.
– For even quicker prep, use ready to cook Hazeldenes Honey Soy Kebabs.
FOR SOMETHING DIFFERENT:
– If time permits, cook rice the night prior and refrigerate. When required, add rice to wok with oil, spring onions and capsicum, tossing until just fried. Fold in egg and serve as a fried rice.
