32 Hazeldenes chicken wings (to serve 4ppl, 8 pieces each)

Miso marinade

  • 700ml dark lager (local or Guinness)
  • 150g yellow miso paste (also called white or shiro miso)
  • 100ml gluten free soy sauce
  • 50ml fish sauce


  • To make the miso marinade whisk the beer, miso paste, soy and fish sauce in a large metal bowl until combined.
  • Pour mixture over the chicken wings and toss to coat evenly.
  • Preheat the oven to 200°c and place the marinated chicken wings on lined baking trays. Bake for 10-15 minutes or until a golden crust forms over the wings.
  • Serve immediately, garnished with crushed salted peanuts, coriander and celery leaves.
  • Serve shredded carrot, chilli and ginger mixed in a bowl on the side.

TIP:  For deeper flavour, cover to marinate for 24 hours in the fridge. The marinate is still great if  made just prior to cooking.
